My Vin
Santo is produced only in small amounts as it
is a particularly special wine. It is made only from the highest
quality grapes, scrupulously chosen from the following varieites:
Malvasia (60%), Pulcinculo (30%), Trebbiano (10%), all of which are
grown in Vigna al Piano and Vigna al Fosso on the Podere Corsica
farm.
The grapes, “hand-selected” from the vine are laid to dry on lake
reed mats where they remain for at least 120 days. At the end of
this process they are pressed and the must obtained is placed in
small casks of 50 to 75 litres, its home for at least the next five
years. During this time it will not be touched. Finally the wine is
released, a moment of great emotion, because each cask is a surprise;
the quality and even the quantity is unknown.
This is all part of
the charm of Vin Santo, a mystery which continues to fascinate me
year after year.
Once released from the casks the wine is
bottle-aged for at least 30 - 36 months, all of which means that my
Vin Santo is ready to be sold only after ten or sometimes twelve
years, depending on the vintage.
Grape Varieties:

Can be kept for: 15 - 20 years.
