WINE NOBILE DI MONTEPULCIANO D.O.C.G.
Podere
Corsica consists of five vineyards: Vigna al Piano (which
while seeming low-lying is in fact on the top of a hill which
appears to have had the top cut off!), Vigna al Fosso, Vigne dei
Mandorli I and II and Vigna di Querceritta (the most recent). The
Vino Nobile grapes in each vineyard are chosen by hand and fermented
in stainless steel containers. The wine is the then placed in
tonneaux or small French oak barrels where the Vino Nobile they
acquire all the necessary typical characteristics. The aging period
is concluded by several months of bottle aging which coincides with
the hot summer months. This helps the wine to deal better with its
first summer as a finished product. I enjoy personally overseeing
the entire aging process of my wines. I want to be sure that they
are really ready to be drunk by my customers, even if this sometimes
means that they arrive on the market a little later than other wines.
In fact, my Vino Nobile is sold only in September after the second
year of production, when it reaches its best conditions for tasting.
Those who know my wines appreciate this practice because they know
that the wine’s intitial hardness falls away in the bottle and the
most beautiful characteristics of the Prugnolo Gentile grape emerge
(there is only a small presence of Mammolo grapes). It is also for
this reason that my Vino Nobile is often listed as one of
the“classici di Montepulciano”, which is to say, one of the wines
that most typically represents the characteristics of
Montepulciano’s grapes.
